Sea bass en papillote with spring onions and raisins

Sea Bass en Papillote with Spring Onions and Raisins Recipe

Ingredients

  • 2 sea bass fillets
  • 4 spring onions, sliced
  • 2 cloves garlic, minced
  • 1/2 lemon, thinly sliced
  • 1/4 cup raisins
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Cut two large pieces of parchment paper or aluminum foil, each about 20 inches long.
  3. Season the sea bass fillets with salt and pepper on both sides and place one fillet on each piece of parchment paper.
  4. In a bowl, mix together the sliced spring onions, minced garlic, raisins and olive oil. Pour the mixture evenly over each fillet. Top each fillet with a few thin slices of lemon.
  5. To create the papillote, bring the long edges of the parchment paper or aluminum foil together, making sure to leave enough space for steam to circulate. Starting at one end, make small folds along the edge, working your way to the other end, until the packet is tightly sealed.
  6. Place the papillotes on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the fish is cooked through.
  7. Remove the papillotes from the oven and carefully open them. Serve the sea bass en papillote hot with steamed vegetables or a side salad.
