Seafood Paella: Traditional Recipe
Ingredients:
- 3 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 cups Bomba or Calasparra rice
- 1 teaspoon saffron threads, crushed
- 5 cups fish or chicken stock
- 1 cup white wine
- 1 pound clams, scrubbed and debearded
- 1 pound mussels, scrubbed and debearded
- 1 pound shrimp, peeled and deveined
- 1 pound squid, sliced into rings
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tomato, chopped
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a paella pan over medium-high heat and sauté the onion and garlic until the onions are translucent.
- Add the rice and saffron, stir until the rice is coated and slightly toasted.
- Pour in the stock and wine and stir to combine.
- Arrange the clams, mussels, shrimp, squid, bell peppers and tomato on top of the rice mixture.
- Bring the mixture to a simmer and cook, uncovered, for 20-25 minutes, or until the rice is tender and the seafood is cooked through.
- Season with salt and pepper, to taste.
- Remove from heat and let the paella rest for a few minutes before serving.
