Seafood Paella: Traditional Recipe

Ingredients:

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups Bomba or Calasparra rice
  • 1 teaspoon saffron threads, crushed
  • 5 cups fish or chicken stock
  • 1 cup white wine
  • 1 pound clams, scrubbed and debearded
  • 1 pound mussels, scrubbed and debearded
  • 1 pound shrimp, peeled and deveined
  • 1 pound squid, sliced into rings
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tomato, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a paella pan over medium-high heat and sauté the onion and garlic until the onions are translucent.
  2. Add the rice and saffron, stir until the rice is coated and slightly toasted.
  3. Pour in the stock and wine and stir to combine.
  4. Arrange the clams, mussels, shrimp, squid, bell peppers and tomato on top of the rice mixture.
  5. Bring the mixture to a simmer and cook, uncovered, for 20-25 minutes, or until the rice is tender and the seafood is cooked through.
  6. Season with salt and pepper, to taste.
  7. Remove from heat and let the paella rest for a few minutes before serving.
