Seafood Risotto: Gourmet Recipe

Ingredients:

  • 1 1/2 cups Arborio rice
  • 1 lb of seafood mix (shrimp, scallops, and calamari)
  • 4 cups of seafood or chicken broth
  • 1/2 cup of dry white wine
  • 5 cloves of garlic, minced
  • 1 large onion, diced
  • 1/2 cup of grated Parmesan cheese
  • 2 tbsp of butter
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil and butter in a large pan over medium heat.
  2. Add the onion and garlic and sauté until the onion is translucent.
  3. Add the Arborio rice and stir well to coat the rice in the oil/butter mixture.
  4. Add the white wine and cook until the wine is almost completely absorbed.
  5. Add the seafood mix to the pan and cook until the shrimp turns pink and the scallops and calamari are cooked through.
  6. Add the broth to the pan gradually, one ladle at a time, stirring the rice constantly until the broth is almost completely absorbed.
  7. Continue adding the broth and stirring until the rice is al dente (cooked but still firm to the bite).
  8. Turn off the heat and stir in the grated Parmesan cheese and a bit of salt and pepper to taste.
  9. Cover the pan and let it sit for 5 minutes to allow the cheese to melt and the flavors to meld.
  10. Serve hot and enjoy!
