Ingredients:

  • 1/2 cup shredded almonds
  • 1/2 pound shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons brown sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon chili flakes
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh coriander, chopped (optional)

Instructions:

  1. Toss the shredded almonds in a dry pan over medium heat until golden brown, stirring constantly to prevent burning.
  2. Remove the almonds from the pan and set aside.
  3. In the same pan, heat the vegetable oil over medium-high heat.
  4. Add the garlic, ginger, and chili flakes, and sauté for 1-2 minutes until fragrant.
  5. Add the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes.
  6. In a small bowl, whisk together the soy sauce, fish sauce, and brown sugar until the sugar is dissolved.
  7. Add the sauce to the pan with the shrimp and stir to coat the shrimp.
  8. Remove the pan from the heat and stir in the toasted almonds.
  9. Garnish with fresh coriander, if desired, and serve hot.
