Shrimp Curry with Lemongrass
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tbsp ginger paste
- 2 lemongrass stalks, thinly sliced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 can coconut milk (14 oz)
- 1 tbsp fish sauce
- 1 tsp brown sugar
- Salt and pepper to taste
- Fresh cilantro leaves, chopped, for garnish
Instructions:
- Heat the vegetable oil in a large pan over medium heat. Add the onion, garlic, and ginger paste and sauté for 2-3 minutes or until fragrant.
- Add the lemongrass, curry powder and turmeric and stir for another 2 minutes. Add the shrimp and sauté until they turn pink, about 3-4 minutes.
- Pour in the coconut milk, fish sauce, brown sugar, salt and pepper. Stir and let the mixture come to a boil, then reduce the heat and let it simmer for 5-7 minutes or until the sauce thickens. Garnish with cilantro before serving.
