Shrimp Curry with Lemongrass

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger paste
  • 2 lemongrass stalks, thinly sliced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 can coconut milk (14 oz)
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • Salt and pepper to taste
  • Fresh cilantro leaves, chopped, for garnish

Instructions:

  1. Heat the vegetable oil in a large pan over medium heat. Add the onion, garlic, and ginger paste and sauté for 2-3 minutes or until fragrant.
  2. Add the lemongrass, curry powder and turmeric and stir for another 2 minutes. Add the shrimp and sauté until they turn pink, about 3-4 minutes.
  3. Pour in the coconut milk, fish sauce, brown sugar, salt and pepper. Stir and let the mixture come to a boil, then reduce the heat and let it simmer for 5-7 minutes or until the sauce thickens. Garnish with cilantro before serving.
