Skate Tagine with Carrots and Almonds Recipe

Ingredients

  • 500g fish steak (skate wing), cleaned and cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon saffron threads
  • 1 can (400g) chopped tomatoes
  • 2 cups carrots, peeled and cut into 1-inch chunks
  • 1/2 cup sliced almonds
  • 1/2 cup water
  • Salt and pepper to taste

Directions

  1. In a large dutch oven or tagine, heat the olive oil over medium-high heat. Add the onion and sauté until softened, about 5 minutes. Add the garlic and continue to cook for another minute or until fragrant.
  2. Add the cumin, coriander, paprika, ginger, cayenne pepper, cinnamon and saffron threads. Stir to combine and cook for another minute.
  3. Add the chopped tomatoes, carrots, and water to the pot. Stir to combine and bring to a simmer.
  4. Lower the heat to medium-low and add the fish pieces. Gently stir to combine and ensure that all the fish is covered in the sauce. Cover the pot and let it simmer for 15-20 minutes or until the fish is cooked through.
  5. Remove the lid and sprinkle the sliced almonds over the top of the tagine. Simmer for another 5 minutes or until the almonds are toasted and golden brown.
  6. Season with salt and pepper to taste.
