Skewers of Chicken and Zucchini Meatballs, White Bean Salad

Ingredients:

Chicken and Zucchini Meatballs:

  • 1 pound ground chicken
  • 1 large zucchini, shredded
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Skewers

White Bean Salad:

  • 2 cans white beans, drained and rinsed
  • 1 large red bell pepper, diced
  • 1 small red onion, finely diced
  • 1/4 cup fresh parsley, minced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Directions:

Chicken and Zucchini Meatballs:

  1. In a large bowl, combine ground chicken, shredded zucchini, egg, breadcrumbs, garlic, salt, pepper, and paprika.
  2. Mix until well combined.
  3. Form into small meatballs and thread onto skewers.
  4. Preheat grill to medium-high heat.
  5. Grill skewers for 12-15 minutes or until fully cooked, turning occasionally.

White Bean Salad:

  1. In a large bowl, combine white beans, diced red bell pepper, finely diced red onion, and minced parsley.
  2. In a small bowl, whisk together olive oil and red wine vinegar.
  3. Pour dressing over the bean mixture and toss until well coated.
  4. Season with salt and pepper to taste.
