Skewers of Chicken and Zucchini Meatballs, White Bean Salad
Ingredients:
Chicken and Zucchini Meatballs:
- 1 pound ground chicken
- 1 large zucchini, shredded
- 1 egg
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Skewers
White Bean Salad:
- 2 cans white beans, drained and rinsed
- 1 large red bell pepper, diced
- 1 small red onion, finely diced
- 1/4 cup fresh parsley, minced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Directions:
Chicken and Zucchini Meatballs:
- In a large bowl, combine ground chicken, shredded zucchini, egg, breadcrumbs, garlic, salt, pepper, and paprika.
- Mix until well combined.
- Form into small meatballs and thread onto skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 12-15 minutes or until fully cooked, turning occasionally.
White Bean Salad:
- In a large bowl, combine white beans, diced red bell pepper, finely diced red onion, and minced parsley.
- In a small bowl, whisk together olive oil and red wine vinegar.
- Pour dressing over the bean mixture and toss until well coated.
- Season with salt and pepper to taste.
