Smoked Herring and Hazelnut Barley “Risotto” Recipe

Ingredients:

  • 1 lb smoked herring fillets
  • 1 1/2 cups pearled barley
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped hazelnuts
  • 3 tbsp butter
  • 1/2 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Place the smoked herring fillets on a baking sheet and bake for 10-15 minutes until crispy. Remove and set aside.
  3. In a large saucepan, heat the vegetable broth to a simmer.
  4. In another saucepan, melt the butter over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  5. Add the pearled barley to the onion mixture and stir until coated with the butter.

  8. Stir in the chopped hazelnuts, parmesan cheese, and parsley. Season with salt and pepper to taste.
  9. Divide the barley “risotto” onto serving plates and top each with a crispy smoked herring fillet.
