Soubise Pancakes Recipe

Ingredients:

  • 2 large onions
  • 50g butter
  • ½ teaspoon salt
  • 150g all-purpose flour
  • 1 teaspoon baking powder
  • 250ml milk
  • 2 eggs
  • Extra butter for frying

Instructions:

  1. Peel and finely slice the onions and cook in a large frying pan with the butter and salt, stirring often, for 15 minutes until soft and caramelised. Set aside.
  2. In a bowl, sift together the flour and baking powder.
  3. In another bowl, whisk together the milk and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Add the cooled onion mixture and stir until evenly distributed.
  6. Heat a non-stick frying pan over medium-high heat. Add a small knob of butter and let it melt.
  7. Spoon 2-3 tablespoons of batter per pancake into the pan and cook for 2-3 minutes until bubbles appear on the surface and the bottom is golden brown.
  8. Flip the pancakes over and cook for another minute until golden brown on the other side.
  9. Repeat with the remaining batter, adding more butter to the pan as needed.
  10. Serve hot with your favourite toppings.
