Soubise Pancakes Recipe
Ingredients:
- 2 large onions
- 50g butter
- ½ teaspoon salt
- 150g all-purpose flour
- 1 teaspoon baking powder
- 250ml milk
- 2 eggs
- Extra butter for frying
Instructions:
- Peel and finely slice the onions and cook in a large frying pan with the butter and salt, stirring often, for 15 minutes until soft and caramelised. Set aside.
- In a bowl, sift together the flour and baking powder.
- In another bowl, whisk together the milk and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Add the cooled onion mixture and stir until evenly distributed.
- Heat a non-stick frying pan over medium-high heat. Add a small knob of butter and let it melt.
- Spoon 2-3 tablespoons of batter per pancake into the pan and cook for 2-3 minutes until bubbles appear on the surface and the bottom is golden brown.
- Flip the pancakes over and cook for another minute until golden brown on the other side.
- Repeat with the remaining batter, adding more butter to the pan as needed.
- Serve hot with your favourite toppings.
