Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 4 large eggs
- 1/2 cup milk
- 3-4 quarts chicken broth for serving
Instructions:
- In a large bowl, whisk together the flour, salt, and nutmeg.
- In another bowl, whisk together the eggs and milk.
- Gradually add the egg mixture into the flour mixture until a smooth dough forms. The dough will be thick and sticky.
- Bring a large pot of salted water to boil.
- Working in batches, use a spaetzle maker or a large-holed colander to press the dough into the boiling water. Cook for 2-3 minutes, or until the spaetzles float to the surface.
- Remove the spaetzles with a slotted spoon and transfer to a bowl.
- Repeat until all the dough has been used. You should end up with about 8 cups of spaetzles.
- Using a serving spoon, distribute the spaetzles into bowls. Top with chicken broth and serve hot.
Verdict:
These spaetzles are the perfect comfort food for a cold day. The nutmeg adds a warm touch of spice that makes this dish stand out. Serve with chicken broth for a satisfying classic dish.
