Spaetzles Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 4 large eggs
  • 1/2 cup milk
  • 3-4 quarts chicken broth for serving

Instructions:

  1. In a large bowl, whisk together the flour, salt, and nutmeg.
  2. In another bowl, whisk together the eggs and milk.
  3. Gradually add the egg mixture into the flour mixture until a smooth dough forms. The dough will be thick and sticky.
  4. Bring a large pot of salted water to boil.
  5. Working in batches, use a spaetzle maker or a large-holed colander to press the dough into the boiling water. Cook for 2-3 minutes, or until the spaetzles float to the surface.
  6. Remove the spaetzles with a slotted spoon and transfer to a bowl.
  7. Repeat until all the dough has been used. You should end up with about 8 cups of spaetzles.
  8. Using a serving spoon, distribute the spaetzles into bowls. Top with chicken broth and serve hot.
