Spicy Beef Tagine with Vegetables and Almonds: Family Recipe
Ingredients
- 1.5 pounds of beef stew meat
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon of paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of ground ginger
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of cayenne pepper
- 1 can of diced tomatoes (14.5 ounces)
- 1/2 cup of beef broth
- 1 carrot, peeled and sliced
- 1 zucchini, sliced
- 1/4 cup of slivered almonds
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Brown the beef on all sides, about 3-5 minutes per side. Remove from the pot and set aside.
- Add the onion and garlic to the pot and cook for 2-3 minutes, until softened. Add the paprika, cumin, ginger, cinnamon, and cayenne pepper and cook for another 1-2 minutes, until fragrant. Add the diced tomatoes and beef broth and bring to a simmer.
- Add the beef back to the pot along with the carrot and zucchini. Cover and simmer for 2-2.5 hours, stirring occasionally, until the beef is tender. In the last 10 minutes of cooking, stir in the slivered almonds.
