Ingredients

  • 1.5 pounds of beef stew meat
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon of paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of cayenne pepper
  • 1 can of diced tomatoes (14.5 ounces)
  • 1/2 cup of beef broth
  • 1 carrot, peeled and sliced
  • 1 zucchini, sliced
  • 1/4 cup of slivered almonds
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Brown the beef on all sides, about 3-5 minutes per side. Remove from the pot and set aside.
  2. Add the onion and garlic to the pot and cook for 2-3 minutes, until softened. Add the paprika, cumin, ginger, cinnamon, and cayenne pepper and cook for another 1-2 minutes, until fragrant. Add the diced tomatoes and beef broth and bring to a simmer.
  3. Add the beef back to the pot along with the carrot and zucchini. Cover and simmer for 2-2.5 hours, stirring occasionally, until the beef is tender. In the last 10 minutes of cooking, stir in the slivered almonds.
