Spinach Omelette Recipe

Ingredients:

  • 4 eggs
  • 2 tablespoons of milk
  • 1/2 cup of fresh spinach, chopped
  • 1/4 cup of shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tablespoon of olive oil

Instructions:

  1. In a medium bowl, whisk together eggs, milk, salt and pepper until well blended.
  2. Heat a non-stick skillet over medium heat. Add olive oil and swirl to coat the pan evenly.
  3. Add chopped spinach to the skillet and sauté until it wilts, around 2-3 minutes.
  4. Pour the egg mixture over the spinach and cook for 2-3 minutes, or until the center is set.
  5. Sprinkle shredded cheddar cheese over half the omelette and fold the other half over the cheese. Continue cooking until the cheese is melted and the eggs are cooked through.
