Spinach Salmon Lasagna
This easy spinach salmon lasagna recipe is perfect for a cozy night in or for entertaining guests. With only 4 steps and only 45 minutes of cook time, it’s perfect for any busy weeknight dinner.
Ingredients:
- 1 lb. of salmon fillets, skinned and deboned
- 8 oz. lasagna noodles
- 2 cups of fresh spinach, washed and chopped
- 2 cups of Alfredo sauce
- 1 cup of shredded mozzarella cheese
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Next, add the salmon fillets to the skillet and season with salt and black pepper. Cook for 5-6 minutes on each side until thoroughly cooked through. Remove the fish from the skillet and set them aside to cool.
- Cook the lasagna noodles according to the package instructions. Once cooked, drain and set them aside until needed.
- In a mixing bowl, add the Alfredo sauce and chopped spinach. Mix well until fully incorporated.
- Grease a 9×13 inch baking dish with cooking spray. Layer the lasagna noodles at the bottom of the dish. Add a layer of salmon on top of the noodles and then pour half of the spinach Alfredo sauce mixture over the salmon. Repeat the layering process one more time.
- Finish the lasagna by sprinkling the top with the shredded mozzarella cheese.
- Bake the lasagna in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- Once the lasagna is done cooking, remove it from the oven and let it cool for a few minutes before slicing and serving.
