Stir-fried Beef Teriyaki

Ingredients:

  • 1 lb beef sirloin, sliced thinly
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 red bell pepper, sliced thinly
  • 1/2 green bell pepper, sliced thinly
  • 1/2 onion, sliced thinly
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • Green onions, chopped for garnish
  • Cooked rice for serving

Instructions:

  1. In a bowl, combine soy sauce, mirin, brown sugar and cornstarch. Mix well and set aside.
  2. Heat vegetable oil in a large pan or wok over high heat. Add garlic and ginger and sauté until fragrant.
  3. Add beef to the pan and stir-fry until browned. Remove beef from the pan and set aside.
  4. Add bell peppers and onion to the pan and stir-fry for 1-2 minutes until they are slightly cooked but still crisp.
  5. Return beef to the pan and pour the soy sauce mixture over everything. Stir-fry for another 2-3 minutes until the sauce thickens and coats everything evenly.
  6. Garnish with green onions and serve hot over a bed of rice.
