Stir-fried Beef Teriyaki
Ingredients:
- 1 lb beef sirloin, sliced thinly
- 2 tablespoons vegetable oil
- 1 tablespoon garlic, minced
- 1 teaspoon ginger, minced
- 1/2 red bell pepper, sliced thinly
- 1/2 green bell pepper, sliced thinly
- 1/2 onion, sliced thinly
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- Green onions, chopped for garnish
- Cooked rice for serving
Instructions:
- In a bowl, combine soy sauce, mirin, brown sugar and cornstarch. Mix well and set aside.
- Heat vegetable oil in a large pan or wok over high heat. Add garlic and ginger and sauté until fragrant.
- Add beef to the pan and stir-fry until browned. Remove beef from the pan and set aside.
- Add bell peppers and onion to the pan and stir-fry for 1-2 minutes until they are slightly cooked but still crisp.
- Return beef to the pan and pour the soy sauce mixture over everything. Stir-fry for another 2-3 minutes until the sauce thickens and coats everything evenly.
- Garnish with green onions and serve hot over a bed of rice.
