Stir-Fried Vegetables with Tofu Recipe
Ingredients
- 1 block of firm tofu, drained and pressed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of vegetable oil
- 2 tablespoons of soy sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of cornstarch
- 1/4 cup of chopped green onions
Instructions
- Cut the tofu into small cubes and set aside.
- Heat the vegetable oil in a wok or large pan over high heat.
- Add the garlic and onions and stir-fry for 1-2 minutes until fragrant.
- Add the bell peppers, zucchini, and yellow squash and stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Add the tofu and continue to stir-fry for another 2-3 minutes until the tofu is lightly browned.
- In a small bowl, mix together the soy sauce, sesame oil, and cornstarch. Pour the mixture over the vegetables and tofu and stir-fry for an additional 1-2 minutes until the sauce has thickened.
- Garnish with chopped green onions and serve hot.
