Stir-Fried Vegetables with Tofu

Ingredients

  • 1 block of firm tofu, drained and pressed
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon of vegetable oil
  • 2 tablespoons of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of cornstarch
  • 1/4 cup of chopped green onions

Instructions

  1. Cut the tofu into small cubes and set aside.
  2. Heat the vegetable oil in a wok or large pan over high heat.
  3. Add the garlic and onions and stir-fry for 1-2 minutes until fragrant.
  4. Add the bell peppers, zucchini, and yellow squash and stir-fry for 2-3 minutes until the vegetables are slightly softened.
  5. Add the tofu and continue to stir-fry for another 2-3 minutes until the tofu is lightly browned.
  6. In a small bowl, mix together the soy sauce, sesame oil, and cornstarch. Pour the mixture over the vegetables and tofu and stir-fry for an additional 1-2 minutes until the sauce has thickened.
  7. Garnish with chopped green onions and serve hot.
