Ingredients:

  • 1 whole Bresse chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh thyme leaves
  • 1/2 cup fresh rosemary, chopped
  • 1/2 cup bread crumbs
  • Salt and pepper, to taste
  • 1/2 cup chicken broth
  • 4 tbsp butter, melted

Instructions:

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the onion, garlic, carrot, celery, parsley, thyme, rosemary, bread crumbs, 2 tablespoons of melted butter, and a pinch of salt and pepper. Mix to combine and set aside.
  3. Rinse the Bresse chicken inside and out and pat dry with paper towels. Season the inside of the chicken with salt and pepper, then stuff it with the vegetable mixture.
  4. Using kitchen twine, tie the legs of the chicken together and tuck the wings under the body.
  5. Place the chicken in a large casserole dish. Pour the chicken broth and remaining melted butter over the chicken.
  6. Cover the casserole dish with a lid or aluminum foil and place it in the oven.
  7. Bake the chicken for 1 hour, then remove the lid or foil.
  8. Bake the chicken for an additional 15-20 minutes, or until the skin is crispy and golden brown and the temperature of the thickest part of the chicken registers 165°F on a meat thermometer.
  9. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
