Stuffed Cabbage
Ingredients
- 1 head of cabbage
- 1 lb. ground beef
- 1 cup cooked rice
- 1 onion, diced
- 1 egg
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 can (14 oz.) diced tomatoes
- 1 can (8 oz.) tomato sauce
- 1/2 cup brown sugar
- 1/2 cup lemon juice
- 1/2 cup raisins
Directions
- Preheat oven to 350°F (175°C)
- Discard the cabbage’s outermost leaves, cut out the cabbage core at the bottom, and put the cabbage head into a pot of boiling water. Cover and let steam for 10-12 minutes until the leaves soften and begin to pull away easily from the cabbage head. Drain and let cool.
- In a bowl, combine ground beef, cooked rice, onion, egg, salt, and pepper. Mix thoroughly.
- Carefully remove 12 large cabbage leaves from the head. Cut away the thick center ribs from each leaf but be careful not to cut through the leaf. Place 2-3 tablespoons of the beef and rice mixture into the center of each leaf. Roll the leaf, tuck in the sides, and continue rolling to create a neat package.
- Place the stuffed cabbage rolls seam-side down in a 9×13 inch baking dish. Repeat until all the cabbage leaves have been filled and rolled.
- In a separate bowl, combine diced tomatoes, tomato sauce, brown sugar, lemon juice, and raisins. Mix well.
- Pour the tomato sauce mixture over the stuffed cabbage rolls.
- Cover the baking dish with foil and bake for 1 hour.
- Remove foil and bake for an additional 30 minutes.
- Remove from oven, let cool, and serve.
