Stuffed Saddle of Lamb

Ingredients:

  • 1 saddle of lamb
  • 6 garlic cloves, peeled and crushed
  • 2 teaspoons of chopped rosemary
  • 2 teaspoons of chopped thyme
  • 1/2 cup of breadcrumbs
  • 1/2 cup of grated parmesan cheese
  • Salt and pepper
  • Olive oil

Instructions:

  1. Preheat oven to 180°C.
  2. Remove any excess fat from the saddle of lamb.
  3. In a bowl, mix together the garlic, rosemary, thyme, breadcrumbs, parmesan cheese, salt, and pepper to create the stuffing mixture.
  4. Cut a small slit at the top of the lamb saddle so you can spoon the stuffing mixture into it.
  5. Stuff the lamb saddle with the mixture, and then use kitchen twine to tie it up tightly.
  6. Brush olive oil over the saddle of lamb and season generously with salt and pepper.
  7. Place the lamb in a large roasting pan, and roast for approximately 1 to 1 1/2 hours (depending on the size of the saddle), or until the lamb is cooked to your liking.
  8. Remove the lamb from the oven, cover with foil, and let it rest for 10-15 minutes before slicing.
