Stuffed Saddle of Lamb
Ingredients:
- 1 saddle of lamb
- 6 garlic cloves, peeled and crushed
- 2 teaspoons of chopped rosemary
- 2 teaspoons of chopped thyme
- 1/2 cup of breadcrumbs
- 1/2 cup of grated parmesan cheese
- Salt and pepper
- Olive oil
Instructions:
- Preheat oven to 180°C.
- Remove any excess fat from the saddle of lamb.
- In a bowl, mix together the garlic, rosemary, thyme, breadcrumbs, parmesan cheese, salt, and pepper to create the stuffing mixture.
- Cut a small slit at the top of the lamb saddle so you can spoon the stuffing mixture into it.
- Stuff the lamb saddle with the mixture, and then use kitchen twine to tie it up tightly.
- Brush olive oil over the saddle of lamb and season generously with salt and pepper.
- Place the lamb in a large roasting pan, and roast for approximately 1 to 1 1/2 hours (depending on the size of the saddle), or until the lamb is cooked to your liking.
- Remove the lamb from the oven, cover with foil, and let it rest for 10-15 minutes before slicing.
