Stuffed Tomatoes Recipe
Ingredients
- 4 medium-sized tomatoes
- 1 cup cooked quinoa
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped red onion
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Cut off the top of each tomato and scoop out the seeds and flesh with a spoon. Discard the seeds and flesh and set the tomato cups aside.
- In a large mixing bowl, combine the cooked quinoa, crumbled feta cheese, chopped parsley, chopped red onion, olive oil, lemon juice, salt, and black pepper. Mix well.
- Spoon the quinoa mixture into the tomato cups, filling them to the top.
- Place the stuffed tomatoes in a baking dish and bake them for 20-25 minutes until the tomatoes are soft and the filling is heated through.
- Remove from the oven and let them cool for a few minutes before serving.
