Stuffed Tomatoes Recipe

Ingredients

  • 4 medium-sized tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the top of each tomato and scoop out the seeds and flesh with a spoon. Discard the seeds and flesh and set the tomato cups aside.
  3. In a large mixing bowl, combine the cooked quinoa, crumbled feta cheese, chopped parsley, chopped red onion, olive oil, lemon juice, salt, and black pepper. Mix well.
  4. Spoon the quinoa mixture into the tomato cups, filling them to the top.
  5. Place the stuffed tomatoes in a baking dish and bake them for 20-25 minutes until the tomatoes are soft and the filling is heated through.
  6. Remove from the oven and let them cool for a few minutes before serving.
