Sukiyaki Recipe

Ingredients:

  • 1 pound thinly sliced beef (sirloin or ribeye)
  • 1/2 cup soy sauce
  • 1/2 cup sake
  • 1/2 cup mirin
  • 1/4 cup sugar
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 1 bunch scallions, cut into 2-inch pieces
  • 2 cups sliced mushrooms (shiitake or button)
  • 1 block firm tofu, cut into bite-size pieces
  • 1 pound udon noodles, cooked according to package directions
  • 2 cups spinach, chopped
  • 4 eggs, beaten

Instructions:

  1. In a bowl, mix together soy sauce, sake, mirin, and sugar until the sugar dissolves.
  2. Heat a large skillet over medium-high heat and add vegetable oil.
  3. Add the beef and cook until browned.
  4. Add the onion and scallions and cook for 2-3 minutes.
  5. Add the mushrooms and tofu, and cook for another 2-3 minutes.
  6. Pour the soy sauce mixture over the ingredients and stir.
  7. Simmer until the sauce thickens, about 5 minutes.
  8. Push the ingredients to one side of the skillet and add the beaten eggs to the other side.
  9. Cook the eggs until set, and then mix them in with the rest of the ingredients.
  10. Add the cooked udon noodles and spinach, and stir everything together.
  11. Simmer for another 2-3 minutes, then serve hot.
