Sunday roast and Yorkshire puddings


Sunday Roast

Ingredients:

  • 1 whole beef or pork rib
  • 8-10 small to medium sized potatoes, peeled and halved
  • 2 large onions, peeled and quartered
  • 4 medium-sized carrots, peeled and chopped into chunks
  • 1 whole garlic bulb, slightly crushed but not peeled
  • 2 sprigs of fresh rosemary, roughly chopped
  • 2-3 tbsp of olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 200°C/fan 180°C/gas mark 6.
  2. Take the beef or pork rib and season with salt and pepper.
  3. In a large roasting tray, drizzle some olive oil and place your rib on one side.
  4. Toss in your carrots, onions, garlic and potatoes on the other side of the tray.
  5. Add a little more salt, pepper and a generous sprinkle of chopped rosemary over the top of the vegetables and rib.
  6. Drizzle a little olive oil over the top of everything.
  7. Cover the tray with foil and place in the oven for 3 hours.
  8. After 3 hours, remove the foil and continue roasting for an additional 30 minutes to fully brown and crisp up the rib.
  9. Remove the tray from the oven and let the meat rest for at least 10 minutes before carving.
  10. Serve with your favorite side dishes and gravy.

Yorkshire Puddings

Ingredients:

  • 125g plain flour
  • 2 eggs
  • 150ml whole milk
  • 1 tsp salt
  • 2-3 tbsp of beef dripping or oil

Directions:

  1. Preheat your oven to 220°C/fan 200°C/gas mark 7.
  2. In a mixing bowl, add your flour and salt, and create a well in the center.
  3. Add your eggs and mix everything together to form a smooth batter.
  4. Gradually pour in your milk while whisking the mixture to prevent any lumps from forming.
  5. Let the mixture stand for around 30 minutes.
  6. Once your oven is heated, divide your beef dripping or oil between the indentations of a muffin tray.
  7. Put the tray in the oven for around 5 minutes to heat up the dripping or oil.
  8. Once the dripping is hot and smoking, divide the batter mixture evenly between the indentations of the muffin tray.
  9. Bake for 20-25 minutes until golden and crispy.
  10. Remove from the oven and serve immediately.
