Sunday Roast
Ingredients:
- 1 whole beef or pork rib
- 8-10 small to medium sized potatoes, peeled and halved
- 2 large onions, peeled and quartered
- 4 medium-sized carrots, peeled and chopped into chunks
- 1 whole garlic bulb, slightly crushed but not peeled
- 2 sprigs of fresh rosemary, roughly chopped
- 2-3 tbsp of olive oil
- Salt and pepper to taste
Directions:
- Preheat your oven to 200°C/fan 180°C/gas mark 6.
- Take the beef or pork rib and season with salt and pepper.
- In a large roasting tray, drizzle some olive oil and place your rib on one side.
- Toss in your carrots, onions, garlic and potatoes on the other side of the tray.
- Add a little more salt, pepper and a generous sprinkle of chopped rosemary over the top of the vegetables and rib.
- Drizzle a little olive oil over the top of everything.
- Cover the tray with foil and place in the oven for 3 hours.
- After 3 hours, remove the foil and continue roasting for an additional 30 minutes to fully brown and crisp up the rib.
- Remove the tray from the oven and let the meat rest for at least 10 minutes before carving.
- Serve with your favorite side dishes and gravy.

Yorkshire Puddings
Ingredients:
- 125g plain flour
- 2 eggs
- 150ml whole milk
- 1 tsp salt
- 2-3 tbsp of beef dripping or oil
Directions:
- Preheat your oven to 220°C/fan 200°C/gas mark 7.
- In a mixing bowl, add your flour and salt, and create a well in the center.
- Add your eggs and mix everything together to form a smooth batter.
- Gradually pour in your milk while whisking the mixture to prevent any lumps from forming.
- Let the mixture stand for around 30 minutes.
- Once your oven is heated, divide your beef dripping or oil between the indentations of a muffin tray.
- Put the tray in the oven for around 5 minutes to heat up the dripping or oil.
- Once the dripping is hot and smoking, divide the batter mixture evenly between the indentations of the muffin tray.
- Bake for 20-25 minutes until golden and crispy.
- Remove from the oven and serve immediately.
