Supreme of Roast Chicken
Ingredients
- 4 chicken supremes
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and black pepper, to taste
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1/2 cup chicken broth
- 1/4 cup white wine
- 1 tbsp flour
Instructions
- Preheat the oven to 375°F.
- Season the chicken supremes with salt and pepper. Heat the olive oil in a pan over medium-high heat. Add the chicken to the pan and cook until browned on both sides, about 2-3 minutes per side.
- Transfer the chicken to a baking dish and roast it in the oven for 20-25 minutes or until cooked through and the internal temperature reaches 165°F.
- While the chicken is cooking, melt the butter in a pan over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
- Sprinkle the flour over the onions and stir to combine. Cook for another 2-3 minutes or until the flour is golden brown.
- Slowly add the chicken broth and white wine to the pan, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until the sauce thickens, about 5-7 minutes.
- Remove the chicken from the oven and let it rest for 5 minutes before plating it. Spoon the sauce over the chicken and serve hot.
Verdict
This roast chicken recipe is packed with flavor and perfect for a special dinner. The chicken supremes come out moist and succulent, while the onion and white wine sauce adds a touch of elegance.
