Ingredients:

  • 4 Flour Tortillas
  • 1 cup Cooked Rice
  • 1 can Black Beans (rinsed and drained)
  • 1/2 cup Corn Kernels
  • 1/2 cup Salsa
  • 1/2 cup Shredded Cheddar Cheese
  • 1/2 cup Sour Cream
  • 1/2 Avocado (diced)
  • 1/2 cup fresh Cilantro (chopped)
  • 1/2 Lime (juiced)
  • Salt and Pepper to taste

Directions:

  1. Preheat the oven to 350°F.
  2. Combine the cooked rice, black beans, corn kernels, salsa, and shredded cheese in a medium-sized bowl.
