Tagliatelle with Squid Ink, Calamari and Raw Ham

Ingredients:

  • 300g tagliatelle
  • 1 sachet of squid ink
  • 200g calamari, cleaned and cut into rings
  • 100g raw ham, thinly sliced
  • 2 cloves of garlic, minced
  • 1 chili, chopped
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook the tagliatelle in salted boiling water according to package instructions. Drain and reserve a cup of pasta water.
  2. In a pan, heat olive oil over medium heat. Add garlic and chili and sauté until fragrant.
  3. Add the calamari and cook for 2-3 minutes until lightly golden. Season with salt and pepper.
  4. Add the squid ink and stir until fully incorporated.
  5. Add the cooked tagliatelle into the pan and toss until the pasta is coated with the sauce. Add pasta water, one tablespoon at a time, if the sauce is too thick.
  6. Serve hot with thinly sliced raw ham on top.
