Tagliatelle with Squid Ink, Calamari and Raw Ham
Ingredients:
- 300g tagliatelle
- 1 sachet of squid ink
- 200g calamari, cleaned and cut into rings
- 100g raw ham, thinly sliced
- 2 cloves of garlic, minced
- 1 chili, chopped
- 3 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Cook the tagliatelle in salted boiling water according to package instructions. Drain and reserve a cup of pasta water.
- In a pan, heat olive oil over medium heat. Add garlic and chili and sauté until fragrant.
- Add the calamari and cook for 2-3 minutes until lightly golden. Season with salt and pepper.
- Add the squid ink and stir until fully incorporated.
- Add the cooked tagliatelle into the pan and toss until the pasta is coated with the sauce. Add pasta water, one tablespoon at a time, if the sauce is too thick.
- Serve hot with thinly sliced raw ham on top.
