Tarbais Beans, Shank, and Green Cabbage Recipe
Ingredients:
- 1 pound of dried Tarbais beans
- 2 pounds of beef shank
- 1 head of green cabbage, chopped
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 bay leaves
- 1 teaspoon of thyme
- Salt and pepper to taste
- Water
- Olive oil
Instructions:
- Soak the Tarbais beans overnight in water.
- Heat the olive oil in a Dutch oven over medium heat and brown the beef shank on all sides. Remove the shank and set it aside.

- Add the shredded beef back into the puree. Serve hot.
