Tarbais Beans, Shank, and Green Cabbage Recipe

Ingredients:

  • 1 pound of dried Tarbais beans
  • 2 pounds of beef shank
  • 1 head of green cabbage, chopped
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 2 bay leaves
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • Water
  • Olive oil

Instructions:

  1. Soak the Tarbais beans overnight in water.
  2. Heat the olive oil in a Dutch oven over medium heat and brown the beef shank on all sides. Remove the shank and set it aside.
  3. Add the onion and garlic to the Dutch oven and cook until the onion is translucent.
  4. Add the cabbage, bay leaves, thyme, salt, and pepper to the Dutch oven. Cook until the cabbage is wilted and the spices are fragrant.

  8. Remove the bay leaves from the Dutch oven and use an immersion blender to blend the beans, cabbage, onion, and garlic into a smooth puree. If you don’t have an immersion blender, you can use a regular blender and puree in batches.
  9. Add the shredded beef back into the puree. Serve hot.
