Tatin with Shallots Recipe

Ingredients

  • 6-8 shallots, peeled and halved
  • 1 sheet of puff pastry
  • 1/2 cup of sugar
  • 1/4 cup of balsamic vinegar
  • 3 tablespoons of butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400F.
  2. In a large skillet, melt the butter over medium-high heat. Add the shallots and cook until caramelized, about 20-25 minutes. Season with salt and pepper. Remove from heat.
  3. In a small saucepan, combine sugar and balsamic vinegar. Cook over medium heat, stirring constantly until the mixture thickens and becomes syrupy, about 10-15 minutes.
  4. Place the caramelized shallots at the bottom of a greased 9-inch cake pan. Pour the balsamic syrup over the shallots.
  5. Roll out the puff pastry to 1/4 inch thickness and cut into a circle large enough to cover the top of the pan. Place the puff pastry on top of the shallots, tucking in the edges.
  6. Bake in the oven for 25-30 minutes or until the pastry is golden brown.
  7. Let the tatin cool for 5-10 minutes before carefully flipping it onto a serving dish.

Serving Suggestions

Best served warm with a dollop of crème fraîche on top. This tatin makes a delicious side dish for roast chicken or grilled steak.
