Thai casserole – Delicious


Thai Casserole Recipe

Ingredients:

  • 1 pound ground chicken
  • ½ cup diced onion
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place a large skillet over medium heat and add in the vegetable oil.
  3. Once heated, add in the ground chicken and cook for around 5-7 minutes, breaking it up using a spoon, until golden brown.
  4. Add in the onions and garlic and cook until the onion is softened, around 3-4 minutes.
  5. Add in the red and green bell peppers and mushrooms and cook until softened, around 5-7 minutes.
  6. In a bowl, mix together the coconut milk, red curry paste, fish sauce, and brown sugar until smooth.
  7. Stir the mixture into the skillet with the vegetables and let it simmer for 5 minutes.
  8. Season with salt and pepper to taste.
  9. Transfer the mixture into a casserole dish and bake in the preheated oven for 15-20 minutes or until bubbly and hot.
  10. Serve hot with steamed rice or noodles.
