The roast potato and its good stuffings

Roast Potato and its Good Stuffings

Ingredients:

  • 4 large potatoes
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 cups diced vegetables (carrots, celery, bell peppers, etc.)
  • 1 cup cooked meat (chicken, beef, pork, etc.)
  • 1 cup cooked rice
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Cut them into wedges or halves, depending on your preference and size of the potato.
  3. In a large mixing bowl, combine olive oil, salt, black pepper, and minced garlic. Add the potatoes and toss to coat well.
  4. Spread the potatoes out in a single layer on a baking sheet. Roast in the preheated oven for 35-40 minutes, or until golden and crispy.
  5. In the meantime, in a skillet over medium heat, melt the butter. Add the diced onion and sauté for 5 minutes or until softened.
  6. Add the diced vegetables and cook for another 5-7 minutes until tender.
  7. Add the cooked meat, rice, breadcrumbs, Parmesan cheese, and parsley. Stir well to combine.
  8. Remove the roasted potatoes from the oven and let them cool for a few minutes.
  9. Using a small spoon or melon baller, scoop out the center of each potato wedge, creating a small cavity. Be careful not to scoop out too much, leaving at least 1/4 inch of potato flesh around the edges.
  10. Fill each potato cavity with the vegetable and meat stuffing mixture.
  11. Return the stuffed potatoes to the oven and bake for another 10-15 minutes, or until the top is golden brown and crispy.
  12. Take the stuffed potatoes out of the oven and let them cool for a few minutes before serving.
