Roast Potato and its Good Stuffings
Ingredients:
- 4 large potatoes
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 medium onion, diced
- 2 cups diced vegetables (carrots, celery, bell peppers, etc.)
- 1 cup cooked meat (chicken, beef, pork, etc.)
- 1 cup cooked rice
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes. Cut them into wedges or halves, depending on your preference and size of the potato.
- In a large mixing bowl, combine olive oil, salt, black pepper, and minced garlic. Add the potatoes and toss to coat well.
- Spread the potatoes out in a single layer on a baking sheet. Roast in the preheated oven for 35-40 minutes, or until golden and crispy.
- In the meantime, in a skillet over medium heat, melt the butter. Add the diced onion and sauté for 5 minutes or until softened.
- Add the diced vegetables and cook for another 5-7 minutes until tender.
- Add the cooked meat, rice, breadcrumbs, Parmesan cheese, and parsley. Stir well to combine.
- Remove the roasted potatoes from the oven and let them cool for a few minutes.
- Using a small spoon or melon baller, scoop out the center of each potato wedge, creating a small cavity. Be careful not to scoop out too much, leaving at least 1/4 inch of potato flesh around the edges.
- Fill each potato cavity with the vegetable and meat stuffing mixture.
- Return the stuffed potatoes to the oven and bake for another 10-15 minutes, or until the top is golden brown and crispy.
- Take the stuffed potatoes out of the oven and let them cool for a few minutes before serving.
