The Welsh Pyramid – Regal Recipe

Ingredients:

  • 500g lamb mince
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 1 tsp. paprika powder
  • 1/2 tsp. cinnamon powder
  • 1/2 tsp. turmeric powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil
  • 2 sheets shortcrust pastry
  • 1 egg, beaten
  • 1-2 tbsp. sesame seeds

Instructions:

  1. Preheat oven to 200°C.
  2. In a large bowl, combine lamb mince, chopped onion, minced garlic, cumin powder, coriander powder, paprika powder, cinnamon powder, turmeric powder, salt and black pepper, and mix well.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add the lamb mince mixture to the skillet and cook until the meat is browned, stirring occasionally, for about 8-10 minutes.
  5. Roll out the shortcrust pastry sheets on a lightly floured surface.
  6. Place one sheet onto a baking tray lined with baking paper.
  7. Spread the lamb mince mixture evenly over the pastry sheet.
  8. Place the second pastry sheet on top of the lamb mince mixture, pressing down firmly around the edges.
  9. Brush the top of the pastry with beaten egg and sprinkle the sesame seeds over the top.
  10. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown.
  11. Remove from the oven and let cool for a few minutes before serving.
