The Welsh Pyramid – Regal Recipe
Ingredients:
- 500g lamb mince
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp. cumin powder
- 1 tsp. coriander powder
- 1 tsp. paprika powder
- 1/2 tsp. cinnamon powder
- 1/2 tsp. turmeric powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 tbsp. olive oil
- 2 sheets shortcrust pastry
- 1 egg, beaten
- 1-2 tbsp. sesame seeds
Instructions:
- Preheat oven to 200°C.
- In a large bowl, combine lamb mince, chopped onion, minced garlic, cumin powder, coriander powder, paprika powder, cinnamon powder, turmeric powder, salt and black pepper, and mix well.
- Heat olive oil in a skillet over medium-high heat.
- Add the lamb mince mixture to the skillet and cook until the meat is browned, stirring occasionally, for about 8-10 minutes.
- Roll out the shortcrust pastry sheets on a lightly floured surface.
- Place one sheet onto a baking tray lined with baking paper.
- Spread the lamb mince mixture evenly over the pastry sheet.
- Place the second pastry sheet on top of the lamb mince mixture, pressing down firmly around the edges.
- Brush the top of the pastry with beaten egg and sprinkle the sesame seeds over the top.
- Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown.
- Remove from the oven and let cool for a few minutes before serving.
