Tikka Masala: Vegetarian Recipe

Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 green chili, chopped
  • 4 tomatoes, chopped
  • 1 tbsp tomato paste
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 cup heavy cream
  • 2 tbsp oil
  • Salt according to taste
  • 2 cups mixed vegetables (carrots, peas, cauliflower)

Method

  1. Heat oil in a pan and add onions, garlic, ginger and green chili. Sauté until onions are translucent.
  2. Add chopped tomatoes, tomato paste and all the dry masala (coriander, cumin, paprika, turmeric and garam masala). Sauté until the tomatoes are mushy.
  3. Add mixed vegetables, salt and 1/2 cup water. Mix everything well and cook on low heat until vegetables are tender.
  4. Add heavy cream and cook for another 2-3 minutes until everything is well combined.
  5. Garnish with fresh coriander and serve hot with naan or rice.
