Tikka Masala: Vegetarian Recipe
Ingredients
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 green chili, chopped
- 4 tomatoes, chopped
- 1 tbsp tomato paste
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 cup heavy cream
- 2 tbsp oil
- Salt according to taste
- 2 cups mixed vegetables (carrots, peas, cauliflower)
Method
- Heat oil in a pan and add onions, garlic, ginger and green chili. Sauté until onions are translucent.
- Add chopped tomatoes, tomato paste and all the dry masala (coriander, cumin, paprika, turmeric and garam masala). Sauté until the tomatoes are mushy.
- Add mixed vegetables, salt and 1/2 cup water. Mix everything well and cook on low heat until vegetables are tender.
- Add heavy cream and cook for another 2-3 minutes until everything is well combined.
- Garnish with fresh coriander and serve hot with naan or rice.
