Tomato, Strawberry and Black Pudding Salad Recipe

Ingredients:

  • 500g cherry tomatoes, halved
  • 250g fresh strawberries, hulled and sliced
  • 200g black pudding, crumbled
  • 1/2 red onion, sliced
  • 2 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • Salt and pepper, to taste
  • Rocket leaves, to serve

Instructions:

  1. In a large bowl, mix together the cherry tomatoes, sliced strawberries, and sliced red onions.
  2. Add in the crumbled black pudding, and toss everything together.
  3. In a separate bowl, mix together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad mixture, and toss everything together again.
  5. Divide the rocket leaves evenly between four plates, and spoon the salad mixture over the top.
  6. Serve immediately.
