Tomatoes stuffed with minced meat
Ingredients
- 6 large tomatoes
- 1 lb ground beef or lamb
- 1 diced onion
- 2 minced garlic cloves
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 cup cooked rice
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F.
- Cut off the tops of the tomatoes and scoop out the insides, leaving just the outer shell. Sprinkle the inside of each tomato with salt and place them upside-down on a paper towel to let the excess liquid drain out.
- In a skillet, cook the ground beef or lamb over medium heat until browned. Drain and set aside.
- In the same skillet, heat the olive oil and cook the onion and garlic until softened. Add the dried oregano and basil, cooked rice, and ground meat. Mix well and cook for another two minutes.
- Fill each tomato with the meat mixture and place them in a baking dish. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes or until the tops of the tomatoes are slightly browned.
- Serve hot and enjoy!
