Tourin – Regal Recipe

Ingredients:

  • 4 large onions, chopped
  • 6 garlic cloves, minced
  • 4 tablespoons of olive oil
  • 2 tablespoons of all-purpose flour
  • 6 cups of chicken or beef broth
  • 1 tablespoon of dried thyme
  • Salt and black pepper to taste
  • 4 slices of sourdough bread
  • 1 cup of grated Gruyere cheese
  • 2 tablespoons of finely chopped fresh parsley for garnish

Instructions:

  1. Heat a large pot over medium heat and add the olive oil. Add the chopped onions and minced garlic to the pot and cook until the onions are translucent.
  2. Sprinkle the flour over the onions and garlic and stir until the flour is evenly distributed.
  3. Pour the chicken or beef broth into the pot and stir to combine with the onion mixture.
  4. Add the dried thyme and season with salt and black pepper to taste.
  5. Bring the mixture to a boil and then reduce the heat to low. Simmer the soup for about 30 minutes, stirring occasionally.
  6. While the soup is simmering, preheat your broiler and slice the sourdough bread into 4 rounds.
  7. Place the bread slices on a baking sheet and sprinkle the grated Gruyere cheese on top of each slice.
  8. Broil the bread slices until the cheese is melted and bubbly, about 4-5 minutes.
  9. To serve, ladle the soup into bowls and place a cheesy bread round on top of each bowl.
  10. Garnish with a sprinkle of fresh parsley and serve hot.
