Tournai-style Rabbit Recipe with Beer

Ingredients:

  • 1 rabbit (cut into pieces)
  • 2 onions (chopped)
  • 3 cloves of garlic (minced)
  • 2 tbsp. of butter
  • 1 can of beer (preferably a Belgian beer)
  • 3 sprigs of thyme (fresh)
  • 2 bay leaves
  • 2 tbsp. of Dijon mustard
  • Salt and pepper (to taste)

Instructions:

  1. Preheat the oven to 350°F.
  2. Melt the butter in a large Dutch oven over medium heat. Add the onions and garlic, and cook until fragrant and softened.
  3. Add the rabbit pieces to the pot and brown on all sides. Remove and set aside.
  4. Add the beer to the pot and scrape the bottom to get up any brown bits. Add the thyme, bay leaves, and mustard and stir well.
  5. Return the rabbit to the pot and spoon the beer mixture over the rabbit pieces.
  6. Cover the pot and bake in the oven for 1 1/2 to 2 hours or until the rabbit is tender and falling off the bone.
  7. Remove from the oven, and serve.
