Traditional Beef Bourguignon

Ingredients

  • 2 pounds beef chuck roast, cut into 1 inch cubes
  • 4 slices bacon, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound small red potatoes, quartered
  • 2 carrots, sliced
  • 1 cup frozen pearl onions
  • 1 cup sliced mushrooms
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Heat a large Dutch oven over medium heat. Add the bacon and cook until crispy. Remove bacon and set aside.
  2. Add the beef to the bacon grease in the Dutch oven and brown on all sides. Remove the beef and set aside.
  3. Add the onion and garlic to the Dutch oven and sauté until onion is translucent.
  4. Add the red wine to the Dutch oven and stir, scraping the browned bits from the bottom of the pot.
  5. Add the beef broth, tomato paste, thyme, and bay leaf. Stir to combine.
  6. Return the beef and bacon to the Dutch oven. Bring to a simmer and cover.
  7. Simmer for 2 hours, stirring occasionally.
  8. Add the potatoes, carrots, pearl onions, and mushrooms to the pot. Cover and simmer for another hour, or until veggies are tender.
  9. Remove the bay leaf and stir in the butter. Season with salt and pepper to taste.
