Traditional Lamb Stew: Easy Recipe
Warm, hearty and comforting, a traditional lamb stew makes for a perfect meal during chilly days. Here is an easy-to-follow recipe that would only take around 1 hour and 25 minutes to prepare.
Ingredients:
- 1kg lamb shoulder, trimmed and cut into chunks
- 3 tbsp. plain flour
- 2 onions, chopped
- 3 garlic cloves, crushed
- 4 carrots, sliced
- 2 celery sticks, chopped
- 3 sprigs of thyme
- 2 bay leaves
- 2 tbsp. tomato puree
- 500ml lamb or vegetable stock
- 2 tbsp. vegetable oil
- Salt and freshly ground black pepper
Directions:
- Season the lamb chunks with some salt and black pepper and coat each piece with the plain flour.
- Heat up the vegetable oil in a large, wide-bottomed saucepan or casserole dish and brown the lamb in batches. Set them aside on a plate.
- In the same pan, add the chopped onions with some salt and cook for 3-4 minutes until softened. Add the garlic, celery and carrots and stir-fry for a further few minutes.
- Add the tomato puree, bay leaves and thyme. Pour in the lamb or vegetable stock and bring everything to a boil. Reduce the heat to low, partially cover the pan with a lid and let the stew simmer for an hour, stirring occasionally.
- After an hour, return the lamb to the pan and let it cook for a further 15-20 minutes until tender. Discard the bay leaves and thyme stalks and adjust the seasoning accordingly.
- Divide the hot stew into bowls and serve with some crusty bread or plain boiled potatoes.
