Traditional Lamb Stew: Easy Recipe

Warm, hearty and comforting, a traditional lamb stew makes for a perfect meal during chilly days. Here is an easy-to-follow recipe that would only take around 1 hour and 25 minutes to prepare.

Ingredients:

  • 1kg lamb shoulder, trimmed and cut into chunks
  • 3 tbsp. plain flour
  • 2 onions, chopped
  • 3 garlic cloves, crushed
  • 4 carrots, sliced
  • 2 celery sticks, chopped
  • 3 sprigs of thyme
  • 2 bay leaves
  • 2 tbsp. tomato puree
  • 500ml lamb or vegetable stock
  • 2 tbsp. vegetable oil
  • Salt and freshly ground black pepper

Directions:

  1. Season the lamb chunks with some salt and black pepper and coat each piece with the plain flour.
  2. Heat up the vegetable oil in a large, wide-bottomed saucepan or casserole dish and brown the lamb in batches. Set them aside on a plate.
  3. In the same pan, add the chopped onions with some salt and cook for 3-4 minutes until softened. Add the garlic, celery and carrots and stir-fry for a further few minutes.
  4. Add the tomato puree, bay leaves and thyme. Pour in the lamb or vegetable stock and bring everything to a boil. Reduce the heat to low, partially cover the pan with a lid and let the stew simmer for an hour, stirring occasionally.
  5. After an hour, return the lamb to the pan and let it cook for a further 15-20 minutes until tender. Discard the bay leaves and thyme stalks and adjust the seasoning accordingly.
  6. Divide the hot stew into bowls and serve with some crusty bread or plain boiled potatoes.
