Traditional Provencal Stew Recipe
Ingredients:
- 3 tablespoons olive oil
- 2 pounds beef stew meat, cut into 1-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 onion, diced
- 3 garlic cloves, minced
- 1/2 cup dry red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 carrots, cut into 1-inch pieces
- 4 potatoes, cut into 1-inch pieces
- 1 cup frozen peas, thawed
- 1/4 cup chopped fresh parsley leaves
Instructions:
- In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
- Season the beef with salt and pepper.
- Add the beef to the pot and cook until browned on all sides, about 8 minutes. Remove the beef and set aside on a plate.
- Add the onion and garlic to the pot and cook until softened, about 5 minutes.
- Add the wine and scrape up the brown bits from the bottom of the pot.
- Add the beef broth, tomato paste, thyme, and bay leaf to the pot and give everything a good stir.
- Return the beef to the pot and add the carrots and potatoes. Bring to a boil, then reduce heat to low and simmer for 1 1/2 hours or until the beef is tender and the vegetables are cooked through.
- Add the peas and cook for another 5 minutes.
- Remove the bay leaf and discard.
- Stir in the parsley and serve hot.
