Traditional Provencal Stew Recipe

Ingredients:

  • 3 tablespoons olive oil
  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup dry red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 carrots, cut into 1-inch pieces
  • 4 potatoes, cut into 1-inch pieces
  • 1 cup frozen peas, thawed
  • 1/4 cup chopped fresh parsley leaves

Instructions:

  1. In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
  2. Season the beef with salt and pepper.
  3. Add the beef to the pot and cook until browned on all sides, about 8 minutes. Remove the beef and set aside on a plate.
  4. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  5. Add the wine and scrape up the brown bits from the bottom of the pot.
  6. Add the beef broth, tomato paste, thyme, and bay leaf to the pot and give everything a good stir.
  7. Return the beef to the pot and add the carrots and potatoes. Bring to a boil, then reduce heat to low and simmer for 1 1/2 hours or until the beef is tender and the vegetables are cooked through.
  8. Add the peas and cook for another 5 minutes.
  9. Remove the bay leaf and discard.
  10. Stir in the parsley and serve hot.
