Traditional Veal Stew Recipe
Ingredients:
- 2 lbs. of veal, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 2 cups chicken broth
- 1 bay leaf
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions:
- Heat the olive oil and butter in a large pot over medium-high heat. Add the onions and garlic and cook until the onions are translucent.
- Add the veal and cook until browned on all sides.
- Add the carrots and celery and stir to combine. Cook for 5 minutes.
- Sprinkle the flour over the mixture and stir to combine.
- Slowly pour in the red wine and chicken broth, stirring constantly to prevent lumps.
- Add the bay leaf, thyme, rosemary, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 1 hour, stirring occasionally.
- Remove the bay leaf before serving.
