Traditional Veal Stew Recipe

Ingredients:

  • 2 lbs. of veal, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 2 cups chicken broth
  • 1 bay leaf
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil and butter in a large pot over medium-high heat. Add the onions and garlic and cook until the onions are translucent.
  2. Add the veal and cook until browned on all sides.
  3. Add the carrots and celery and stir to combine. Cook for 5 minutes.
  4. Sprinkle the flour over the mixture and stir to combine.
  5. Slowly pour in the red wine and chicken broth, stirring constantly to prevent lumps.
  6. Add the bay leaf, thyme, rosemary, salt, and pepper. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 1 hour, stirring occasionally.
  8. Remove the bay leaf before serving.
