Turkey Roll Stuffed with Pistachios

Ingredients:

  • 1 boneless turkey breast, about 2 pounds
  • 1 cup shelled pistachios, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat oven to 375°F.
  2. With a meat mallet, pound out turkey breast to about 1/2 inch thickness, and season with salt and black pepper.
  3. In a bowl, mix together pistachios, dried cranberries, breadcrumbs, Parmesan cheese, parsley, rosemary, salt, and black pepper.
