Turkey Rolls Stuffed with Ricotta and Herbs Recipe
Ingredients:
- 4 turkey cutlets
- 1 cup of fresh ricotta cheese
- 1 tablespoon of finely chopped fresh rosemary
- 1 tablespoon of finely chopped fresh thyme
- 1 tablespoon of lemon zest
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 4 wooden skewers soaked in water for 30 minutes
Instructions:
- Preheat the oven to 375°F.
- Place the turkey cutlets on top of a sheet of parchment paper and pound them with a meat mallet until they are all the same thickness.
- In a bowl, stir together the ricotta cheese, rosemary, thyme, lemon zest, salt and black pepper.
- Spoon the herbed ricotta cheese mixture on top of each turkey cutlet, then roll them up tightly.

- Heat the olive oil in a cast iron skillet over medium-high heat. Brown the turkey rolls on all sides, about 3 minutes per side.
- Transfer the skillet to the oven and bake for 15-20 minutes, until the turkey is cooked through and the cheese is melted and bubbly.
- Let the turkey rolls rest for 5 minutes before slicing and serving.
