Turkey with Chestnuts: Festive Recipe

Ingredients:

  • 1 whole turkey (approx. 4-5 kg)
  • 1 kg chestnuts, peeled and boiled until tender
  • 3 onions, chopped
  • 5 cloves garlic, minced
  • 2 cups chicken broth
  • 1/4 cup butter
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 1 tbsp salt
  • 1 tsp black pepper

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Clean and rinse the turkey, removing any giblets or neck from the cavity.
  3. In a large skillet, melt the butter over medium heat. Add the onions and garlic and sauté until soft.
  4. Add the chestnuts and stir to combine.
  5. Add the thyme, rosemary, salt, and pepper and stir again.
  6. Stuff the chestnut mixture into the turkey’s cavity and close it using skewers or kitchen twine.
  7. Place the turkey in a roasting pan and pour the chicken broth over it.
  8. Cover the turkey with foil and roast for 3 hours, basting the turkey every 30 minutes with the pan juices.
  9. Remove the foil and roast the turkey for another 30-60 minutes, until the skin is crispy and the internal temperature of the turkey reaches 165°F (75°C) in the thickest part of the bird.
  10. Remove the turkey from the oven and let it rest for 20-30 minutes before carving.
