Veal Stew Recipe

Ingredients:

  • 1 lb veal, cubed
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and cubed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • Salt and pepper to taste

Directions:

  1. In a large bowl, toss the veal with flour, salt, and pepper.
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the veal and cook until browned. Transfer to a plate and set aside.
  3. Add the onion and garlic into the same pot and cook for 2-3 minutes, until softened.
  4. Add the carrots, celery, potatoes, bay leaf, and thyme. Cook and stir for 5 minutes.
  5. Return veal to the pot. Add the beef broth, bring to a boil and reduce the heat to low.
  6. Cover and simmer for 1 1/2 – 2 hours, until the veal is tender. Add salt and pepper to taste.
  7. Remove the bay leaf before serving.

Serving suggestions:

Serve with crusty bread or over mashed potatoes. Garnish with chopped parsley. Enjoy!
