Veal Stew Recipe
Ingredients:
- 1 lb veal, cubed
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 potatoes, peeled and cubed
- 1 bay leaf
- 1 teaspoon dried thyme
- 4 cups beef broth
- Salt and pepper to taste
Directions:
- In a large bowl, toss the veal with flour, salt, and pepper.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the veal and cook until browned. Transfer to a plate and set aside.
- Add the onion and garlic into the same pot and cook for 2-3 minutes, until softened.
- Add the carrots, celery, potatoes, bay leaf, and thyme. Cook and stir for 5 minutes.
- Return veal to the pot. Add the beef broth, bring to a boil and reduce the heat to low.
- Cover and simmer for 1 1/2 – 2 hours, until the veal is tender. Add salt and pepper to taste.
- Remove the bay leaf before serving.
Serving suggestions:
Serve with crusty bread or over mashed potatoes. Garnish with chopped parsley. Enjoy!
