Veal Tagine Recipe with Split Peas

Ingredients

  • 2 lbs of veal, cut into cubes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp of cumin
  • 1 tsp of ginger
  • 1 tsp of paprika
  • 1 tsp of cinnamon
  • 1 tsp of turmeric
  • 1 can of diced tomatoes
  • 2 cups of chicken stock
  • 2 cups of split peas
  • 1 handful of chopped fresh cilantro
  • 2 tbsp of olive oil

Instructions

  1. Heat the olive oil in a large tagine pot over medium heat. Add the onion and garlic and cook until soft and fragrant, stirring occasionally for around 5 minutes.
  2. Add the veal cubes to the pot and cook until browned on all sides. This should take around 5 minutes.
  3. Stir in the spices (cumin, ginger, paprika, cinnamon, and turmeric) and cook for 2-3 minutes or until fragrant. Add the can of diced tomatoes, chicken stock and split peas to the pot and stir everything together. Bring to a boil, then reduce the heat to low and simmer until the veal and split peas are tender and the liquid is slightly thickened. This should take approximately 1.5-2 hours.
  4. Serve the Veal Tagine hot, with a generous sprinkling of chopped cilantro on top. Enjoy with warm bread, rice or couscous.
