Veal Tagine Recipe with Split Peas
Ingredients
- 2 lbs of veal, cut into cubes
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp of cumin
- 1 tsp of ginger
- 1 tsp of paprika
- 1 tsp of cinnamon
- 1 tsp of turmeric
- 1 can of diced tomatoes
- 2 cups of chicken stock
- 2 cups of split peas
- 1 handful of chopped fresh cilantro
- 2 tbsp of olive oil
Instructions
- Heat the olive oil in a large tagine pot over medium heat. Add the onion and garlic and cook until soft and fragrant, stirring occasionally for around 5 minutes.
- Add the veal cubes to the pot and cook until browned on all sides. This should take around 5 minutes.
- Stir in the spices (cumin, ginger, paprika, cinnamon, and turmeric) and cook for 2-3 minutes or until fragrant. Add the can of diced tomatoes, chicken stock and split peas to the pot and stir everything together. Bring to a boil, then reduce the heat to low and simmer until the veal and split peas are tender and the liquid is slightly thickened. This should take approximately 1.5-2 hours.
- Serve the Veal Tagine hot, with a generous sprinkling of chopped cilantro on top. Enjoy with warm bread, rice or couscous.
