Ingredients

  • 4 veal tenderloin fillets
  • 8 fresh sage leaves
  • 1 lemon, zested
  • 2 cloves of garlic, minced
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Lay each veal fillet between two sheets of plastic wrap and pound with a meat mallet until about 1/4 inch thickness.
  3. Remove the top sheet of plastic wrap and place 2 sage leaves on top of each veal fillet.
  4. In a small bowl, mix together lemon zest, garlic, 1 tablespoon olive oil, salt, and pepper.
