Vegetable Dal – Treat
Ingredients
- 1 cup yellow lentils
- 3 cups water
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 green chili, chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, potatoes, green beans), chopped
- Salt, to taste
- 1 tablespoon oil
- 1 tablespoon lemon juice
- Coriander leaves, chopped for garnish
Instructions
- In a pressure cooker or a pot, combine lentils, water, turmeric powder, and salt. Cook the lentils until they become tender and mushy, about 20 minutes in a pressure cooker and 45 minutes on the stove.
- In a separate pot, heat oil, cumin seeds, and mustard seeds until they begin to sizzle. Add chopped onion and sauté until golden brown.
- Add chopped tomatoes, green chili, and minced garlic, and let the mixture cook for two to three minutes until the tomatoes become soft.
- Add chopped mixed vegetables to the pot and cook for an additional five minutes or until they soften.
- Add the cooked lentils to the pot and bring the mixture to a boil. Cook for five more minutes, stirring occasionally to prevent sticking.
- Remove from heat and stir in lemon juice. Garnish with chopped coriander leaves and serve hot.
