Ingredients

  • 1 cup yellow lentils
  • 3 cups water
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 green chili, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, potatoes, green beans), chopped
  • Salt, to taste
  • 1 tablespoon oil
  • 1 tablespoon lemon juice
  • Coriander leaves, chopped for garnish

Instructions

  1. In a pressure cooker or a pot, combine lentils, water, turmeric powder, and salt. Cook the lentils until they become tender and mushy, about 20 minutes in a pressure cooker and 45 minutes on the stove.
  2. In a separate pot, heat oil, cumin seeds, and mustard seeds until they begin to sizzle. Add chopped onion and sauté until golden brown.
  3. Add chopped tomatoes, green chili, and minced garlic, and let the mixture cook for two to three minutes until the tomatoes become soft.
  4. Add chopped mixed vegetables to the pot and cook for an additional five minutes or until they soften.
  5. Add the cooked lentils to the pot and bring the mixture to a boil. Cook for five more minutes, stirring occasionally to prevent sticking.
  6. Remove from heat and stir in lemon juice. Garnish with chopped coriander leaves and serve hot.
