Ingredients:

  • 1 onion, sliced
  • 2 garlic cloves, minced

  • 4 cups vegetable stock
  • 1 tablespoon soy sauce

  • 2 cups thinly sliced cabbage
  • 1 cup sliced mushrooms
  • 2 cups cooked rice noodles
  • 1 cup fresh bean sprouts
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons chopped scallions
  • 1 lime, cut into wedges

Instructions:

  1. In a large pot, sauté sliced onions, minced garlic, and sliced ginger until fragrant.
  2. Add cinnamon sticks and coriander seeds and continue to cook for 1-2 minutes.
  3. Add vegetable stock, soy sauce, and hoisin sauce. Bring to a boil and reduce heat to low.
  4. Simmer for at least 20 minutes to infuse flavors. Taste and adjust seasoning with additional soy sauce or hoisin sauce.
  5. Strain mixture and discard solids, leaving only the flavorful broth.
  6. Return broth to pot and bring to a simmer. Add thinly sliced cabbage and sliced mushrooms. Cook for 5-10 minutes, until vegetables are tender.
  7. To serve, put cooked rice noodles in a bowl and top with hot broth and cooked vegetables. Add fresh bean sprouts, chopped cilantro, chopped scallions, and a squeeze of lime for taste.
