Ingredients:

  • 2 large slices of bread
  • 1/2 cup shredded cheddar cheese
  • 1 zucchini, sliced
  • 1 red pepper, sliced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup sliced olives (optional)
  • 1/4 cup pesto (optional)

Instructions:

  1. Preheat the oven to 375°F.
  2. Toss the zucchini and red pepper with olive oil, salt, black pepper, garlic powder, and red pepper flakes, if desired. Spread on a baking sheet and roast for 20-25 minutes or until soft and slightly charred.
  3. Spread pesto on one side of each slice of bread (if using).
  4. Layer the grilled vegetables on one slice of bread.

  7. Cover with the second slice of bread.
