Vegetarian Yassa Recipe

Yassa is a traditional Senegalese dish that usually uses chicken or fish as the protein. However, this vegetarian version is just as flavorful and satisfying, with tofu as the protein source.

Ingredients:

  • 14 oz extra-firm tofu, drained and pressed
  • 1/2 cup vegetable oil
  • 3 onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 Tbsp grated ginger
  • 4 Tbsp lemon juice
  • 4 Tbsp red wine vinegar
  • 2 Tbsp Dijon mustard
  • 1 tsp paprika
  • 1 bay leaf
  • 1/2 cup water
  • salt and pepper, to taste
  • 2 Tbsp chopped parsley, for garnish

Instructions:

  1. Cut the tofu into cubes and set aside.
  2. Heat 1/4 cup of the vegetable oil in a large skillet over medium-high heat. Add the tofu and sauté until browned on all sides, about 5 minutes. Remove the tofu from the skillet and set aside.
  3. Reduce the heat to medium and add the remaining 1/4 cup of oil to the skillet. Add the onions and cook until softened and lightly browned, about 10 minutes.
  4. Add the garlic and ginger and cook for another minute.
  5. In a bowl, whisk together the lemon juice, red wine vinegar, Dijon mustard, paprika, bay leaf, water, salt, and pepper.
  6. Add the sauce to the skillet and bring to a simmer. Add the tofu, cover, and simmer for 15-20 minutes, stirring occasionally.
  7. Garnish with chopped parsley and serve hot with rice or another grain of your choice.
