Vegetarian Yassa Recipe
Yassa is a traditional Senegalese dish that usually uses chicken or fish as the protein. However, this vegetarian version is just as flavorful and satisfying, with tofu as the protein source.
Ingredients:
- 14 oz extra-firm tofu, drained and pressed
- 1/2 cup vegetable oil
- 3 onions, thinly sliced
- 3 garlic cloves, minced
- 1 Tbsp grated ginger
- 4 Tbsp lemon juice
- 4 Tbsp red wine vinegar
- 2 Tbsp Dijon mustard
- 1 tsp paprika
- 1 bay leaf
- 1/2 cup water
- salt and pepper, to taste
- 2 Tbsp chopped parsley, for garnish
Instructions:
- Cut the tofu into cubes and set aside.
- Heat 1/4 cup of the vegetable oil in a large skillet over medium-high heat. Add the tofu and sauté until browned on all sides, about 5 minutes. Remove the tofu from the skillet and set aside.
- Reduce the heat to medium and add the remaining 1/4 cup of oil to the skillet. Add the onions and cook until softened and lightly browned, about 10 minutes.
- Add the garlic and ginger and cook for another minute.
- In a bowl, whisk together the lemon juice, red wine vinegar, Dijon mustard, paprika, bay leaf, water, salt, and pepper.
- Add the sauce to the skillet and bring to a simmer. Add the tofu, cover, and simmer for 15-20 minutes, stirring occasionally.
- Garnish with chopped parsley and serve hot with rice or another grain of your choice.
