Zucchini and Smoked Salmon Croque-Cake Recipe

Ingredients:

  • 1 large zucchini, grated
  • 6 slices of bread, crusts removed
  • 150g smoked salmon
  • 1/2 cup cream cheese
  • 1/4 cup chopped fresh chives
  • 4 eggs
  • 1 cup milk
  • 1/2 cup grated cheddar cheese
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter

Instructions:

  1. Preheat the oven to 180°C.
  2. Grease a 22cm cake tin and set aside.
  3. Lay the bread slices on a flat surface and spread the cream cheese on one side of each slice.
  4. Top the cream cheese with smoked salmon, grated zucchini, and chives.
  5. Carefully stack the bread slices on top of one another to form a tall “cake”.
  6. In a separate bowl, whisk together the eggs, milk, cheddar cheese, Dijon mustard, salt, and pepper.
  7. Pour the egg and cheese mixture over the bread slices. Press down gently to ensure that the bread absorbs the mixture.
  8. Bake for 30-40 minutes or until the top is golden brown.
  9. Remove from the oven and let the croque-cake cool for 5-10 minutes before serving.
