Arancini Recipe

Ingredients:

  • 2 cups of Arborio rice
  • 4 cups of chicken broth
  • 1/2 cup of parmesan cheese
  • 1/2 cup of breadcrumbs
  • 1/2 cup of finely chopped onion
  • 1/4 cup of finely chopped parsley
  • 1/4 cup of olive oil
  • 1 cup of mozzarella cheese, diced
  • 1 cup of vegetable oil
  • 3 eggs, lightly beaten
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, bring the chicken broth to a boil. Add the Arborio rice and reduce heat to low. Cover the pan and let it simmer for 20 minutes or until the rice is cooked.
  2. Remove the pan from the heat and let it cool down for a few minutes.
  3. In a large skillet, heat the olive oil over medium heat. Add the onions and parsley and cook until the onions are tender and translucent.
  4. Add the cooked Arborio rice to the skillet with the onion mixture and mix well. Add the parmesan cheese and breadcrumbs and stir until well combined.
  5. Remove the skillet from heat and let it cool down for a few minutes.
  6. Add the diced mozzarella cheese to the rice mixture and mix well.
  7. Scoop 1/4 cup of the rice mixture into your hands and shape it into a ball. Repeat until all the mixture is used and you have about 20-24 balls.
  8. In a shallow dish, beat the eggs and add some salt and pepper.
  9. In a large saucepan, heat the vegetable oil over medium-high heat.
  10. Dip the rice balls into the beaten eggs, then roll them in the breadcrumbs to coat them evenly.
  11. Add the rice balls to the hot vegetable oil and fry for 2-3 minutes or until they are golden brown in color. Remove the arancini with a slotted spoon and place them on a paper towel to drain any excess oil.
  12. Serve hot with some marinara sauce on the side.
