Arancini Recipe
Ingredients:
- 2 cups of Arborio rice
- 4 cups of chicken broth
- 1/2 cup of parmesan cheese
- 1/2 cup of breadcrumbs
- 1/2 cup of finely chopped onion
- 1/4 cup of finely chopped parsley
- 1/4 cup of olive oil
- 1 cup of mozzarella cheese, diced
- 1 cup of vegetable oil
- 3 eggs, lightly beaten
- Salt and pepper to taste
Instructions:
- In a medium saucepan, bring the chicken broth to a boil. Add the Arborio rice and reduce heat to low. Cover the pan and let it simmer for 20 minutes or until the rice is cooked.
- Remove the pan from the heat and let it cool down for a few minutes.
- In a large skillet, heat the olive oil over medium heat. Add the onions and parsley and cook until the onions are tender and translucent.
- Add the cooked Arborio rice to the skillet with the onion mixture and mix well. Add the parmesan cheese and breadcrumbs and stir until well combined.
- Remove the skillet from heat and let it cool down for a few minutes.
- Add the diced mozzarella cheese to the rice mixture and mix well.
- Scoop 1/4 cup of the rice mixture into your hands and shape it into a ball. Repeat until all the mixture is used and you have about 20-24 balls.
- In a shallow dish, beat the eggs and add some salt and pepper.
- In a large saucepan, heat the vegetable oil over medium-high heat.
- Dip the rice balls into the beaten eggs, then roll them in the breadcrumbs to coat them evenly.
- Add the rice balls to the hot vegetable oil and fry for 2-3 minutes or until they are golden brown in color. Remove the arancini with a slotted spoon and place them on a paper towel to drain any excess oil.
- Serve hot with some marinara sauce on the side.
